Blueberry Coconut Granola ~ HIT #3

Some would say that Granola is not healthy, but who can resist this Blueberry Coconut Granola?   Toasted oats, dried blueberries, and coconut with just a touch of lemon.  All natural ingredients = Healthy Inspiration Tuesday #3!  The oils and the sugar kept to the bare minimum!!

Definitely brings me to a bright summer day, walking through grassy fields…..settling down on a large blanket to relax and daydream about all the possibilities that lay ahead!  As the days get shorter, and the air leaves a chill in your bones that only a long hot shower will cure, we all need a little bit of sunshine in our daily diet, and this Blueberry Coconut Granola does not fail.

How many of you buy your granola at the local supermarket or specialty store?  I cringe when I see the prices upwards of $8 for a measly 1/2 pound of granola.  What a rip off!  Granola is one of the easiest recipes you can make, and it is so VERSATILE!  You can switch up the ingredients to suit your own likes and needs.  Don’t like coconut…..don’t add it in.  You prefer cranberries or cherries?  Go ahead, it is very forgiving.   This is definitely different from the honey nut granola recipe I recently posted.   Haven’t seen it yet?  You can find it here.….

Most people eat granola as if it were cereal.  I prefer it solo, or on top of yogurt……. vanilla and lemon are the perfect accompaniment!   I can’t honestly say I have ever eaten granola with milk.  Maybe I should try it?  Nothing ventured….nothing gained, right?

Pure inspiration (or more brain rambling ADHD)……I should be using this as a crunchy crumb topping for blueberry muffins.  This would be perfect with this recipe!!

I know you will be racing out and buying some dried blueberries…..I am sure you have all of the other ingredients hanging out in your pantry.  This will become one of your favorite granola recipes!!

Blueberry Coconut Granola-Tempting Thyme

Blueberry Coconut Granola

 Serves:  8-10                                                                                     {Printable Recipe}

 Ingredients:

  •  4 cups Rolled Oats
  • 1 cup Dried Blueberries
  • 1 cup Coconut, flaked
  • Zest and juice of 1 Lemon
  • ¼ cup Coconut Oil
  • ¼ cup Honey
  • 1 Tbsp Brown Sugar
  • 1 tsp Vanilla Extract (I used this vanilla)
  • ½ tsp Almond Extract

Directions:

  1. Preheat oven to 325 degrees.
  2. In a large bowl add all of the ingredients and stir until thoroughly combined.
  3. Spread the mixture onto a parchment lined baking sheet, in an even layer, and bake for 12 minutes.  Stir the granola and bake for an additional 12-14 minutes, or until it is golden brown.
  4. Cool the granola completely.  Store in an airtight container.
