It is the weekend….soooooo…..
Wicked Weekend is back and has a new contender!
These couldn’t be any easier, and all because I wanted to make ice cream sandwiches……AND had some peanut butter cups laying around hiding out in a deep, dark place from my wonderful PT. I know, I know, Kroger’s is right down the street. I shouldn’t have to hide food. I hide food candy for 2 reasons, 1. My family will devour it if it is in plain sight, and 2. Let’s face it….who cares if Kroger’s is right down the street if you want to bake with the ingredient RIGHT NOW!
Let me set the scene for you! Last Sunday I was doing double duty, making big batches of chocolate chip cookie dough to freeze for later use, and baking a few pans so we could have ice cream sandwiches. With the kitchen smelling like a cookie factory, I decided to tackle the dining room while they baked. What did I find in the dining room? One of my secret stashes hiding out, waiting patiently, of course!!!! I had totally forgotten about this hiding spot. Stinks getting old, but what a wonderful surprise. Well…….not only did they remind me that I was going to make Peanut Butter Buckeye Cupcakes…… need this amazing recipe?…..go here …..but it started my brain whirling with possibilities. Does this happen to you? I only had a few minutes for the buzzer to go off……… and….

Look at it. Isn’t it beautiful? Why didn’t I think of this before?
We marry chocolate and peanut butter all…..of…..the….time. This combination is pure bliss as a duo! I know you are all nodding your heads reading this. Why not combine it with chocolate chip cookies to make the perfect sandwich?
Ingredients:
Your favorite cookie dough recipe, using 1 Tbsp of dough per cookie….my current favorite recipe is here
Reece Peanut Butter Cups, miniature
Directions:
Bake your favorite chocolate chip cookie recipe. Unwrap the peanut butter cups. Remove cookies from oven, and let sit for 1 minute. Turn half your cookies over, put a peanut butter cup on top, lay another cookie on top and press down gently. Now how easy is that!
If we are going to make cookie sandwiches, we could use twix, hershey kisses….oooh, this would be good with peanut butter cookies, butterfingers. The list and the combinations are ENDLESS. I think I see a fun kitchen experiment in my future!!
