Looks like I took an unexpected week off from the electronics!
It happens to all of us, no control when work and family obligations become top priority!
I have to say it was kind’ve freeing. The phone didn’t see much action! Even when it tried to get my attention on an hourly basis! Neither did Facebook and Twitter! Sigh!
Guess what? It’s okay……the world is still turning and you all know that I won’t leave you for long. When the kids were younger their elementary went unplugged for 1 week in the Spring. Kids would commit to turning off the television and whatever gadgets were cool in that day and age. They instead turned to board games and running around outside (mine were consumed with street hockey, with daily games out in our street). Shouldn’t we all become ‘unplugged’ at times????
Back to food and the reason you are all with me. I had to share this delightful Dijon Vinaigrette Dressing. I received it a while back in a newsletter from our Hyundai North car salesman! I don’t know if you all get newsletters from your salesman (I know that I have NEVER receive one from Honda, nor from Kia), but we receive one monthly from Terry. It contains news updates on his life, with historical National facts and tidbits, the current coupons and specials at the dealership, as well as, a recipe! This Dijon Vinaigrette is the first recipe, from these newsletters, that I tucked away for a rainy day. Well that rainy day happened 2 weekends ago when I made the Easy Quiche recipe for our girls ‘night-in’! Did I tell you I had a great time that night? Women don’t connect enough with their girlfriends, even when we know that our friends breathe life and fresh air into our lives! Why is that??? Anyway, I made this yummy dressing to simply dress a salad of greens, blue cheese and apple chunks!
This recipe is so easy and versatile! I see myself marinating chicken breasts, or pork tenderloin, for grilling in a few short months! Thank you Terry, and Hyundai, for those monthly newsletters……I will be keeping this Dijon Vinaigrette Dressing in my recipe treasure chest!
Want an even quicker version? Grab your favorite infused vinegar, such as raspberry or fig balsamic, and combine with a few Tbsp of Dijon mustard. Shake in jar or whisk. It is simple, speedy and spectacular!

Dijon Vinaigrette
Makes: 1 ¼ cup
Ingredients:
- ¼ cup Dijon Mustard
- ¼ cup Olive Oil
- 3 Tbsp Agave or Honey
- 3 Tbsp minced garlic
- ¼ cup Sherry Vinegar or Red Wine Vinegar
- Fresh ground pepper, to taste
Directions:
1. In a small bowl, whisk all ingredients until combined. If you prefer, you can put all ingredients into a clean jar with lid (sealable) and shake until combined. Serve immediately. Can be stored in refrigerator for 1 week.
