These little rice cups also fit right into my resolution to eat healthier.  They are convenient and perfect for portion control, and will fit easily into my desk drawer at work.  Sometimes I think too much (imagine that) about what to eat, or bring, for lunch…..when these are right under my nose and the perfect solution!  I have even found tons of tips and easy stir in ideas at their website.

Using the Spanish Rice Mix I made the perfect {Easy} Black Beans and Spanish Rice dish.  Start to finish it will be ready in less than 5 minutes.  You want to know the best part of Easy Black Beans and Spanish Rice?  I can take the leftovers to work, and finish off the black beans with the 2nd Spanish Rice cup.  Woo Hoo……..

**They are also perfect for your teenager’s to fix on their own as a snack after school.  B loves rice, and with all the different varieties he won’t get bored with them.  That is huge benefit, and makes me feel good knowing that he will have a healthy alternative as a snack.

Easy Black Beans and Spanish Rice

 Serves:  1-2                                                   Printable Recipe


  • 1 Container (4.4 oz) Minute Ready to Serve Spanish Rice Mix
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (4 oz) can diced green chiles
  • 2 Tbsp minced fresh cilantro
  • Optional:  Shredded Colby Jack cheese, salsa, sour cream, diced tomato


  1. Combine the black beans and green chiles in a microwave safe bowl.  Microwave on High for 2 minutes.  Remove from the microwave and stir in 2 Tbsp cilantro.  Set aside.
  2. Remove the film from the Spanish Rice cup (If you are needing 2 servings, then remove the film off both cups). Place cup in microwave and heat on High for 1 minute.  Remove cup carefully and pour onto serving dish.  Scoop half the black bean mixture onto rice and stir together if desired.  Top with optional ingredients if desired.

Note:  Save the other 1/2 of the black bean mixture for lunch tomorrow.  Just bring the second Spanish Rice mix cup and heat everything up in your microwave at work!
