Blackberry Peach Cobbler Bars
 
 
A cobbler that you can pick up and eat with your hands! With just a hint of bourbon, this fresh fruit cobbler is perfect for any gathering!

Ingredients:
  • 1 cup butter, softened
  • 1 cup firmly packed light brown sugar
  • 1½ cups sugar, divided
  • 4 large eggs
  • 1 Tbsp vanilla extract
  • 1 tsp baking powder
  • ¾ tsp kosher salt
  • 3¼ cups all-purpose flour, divided
  • 3 (6 oz) pkgs fresh blackberries, about 4 cups
  • 4 cups peeled and sliced fresh peaches
  • 3 Tbsp whiskey or bourbon
  • Optional: 1 cup roasted glazed pecan pieces
Directions:
  1. Preheat oven to 350 degrees. Beat first 2 ingredients and 1 cup sugar on medium speed with an electric mixer until creamy. Add in eggs, 1 at a time, beating just until blended after each addition. Stir in vanilla.
  2. Stir together the baking powder, salt, and 3 cups flour; gradually add to butter mixture beating just until blended. Spread ¾ of the batter in a greased and floured 13x9 inch pan. Sprinkle with the fresh blackberries.
  3. Stir together the remaining ½ cup sugar and remaining flour in a medium bowl. Add in the peaches and bourbon, stirring to coat. Spoon mixture over blackberries.
  4. Dollop the remaining batter (if you are using the pecans, add them in here) over the peach mixture.
  5. Bake at 350 degrees for 1 hour or until golden and bubbly. Cool completely on a wire rack. Cut into bars. Store any remaining bars in an airtight container for 3-4 days.
Notes:
** I have not added in the pecans yet, as K is allergic to all nuts, and I want him to have the option of inhaling these awesome cobbler bars.
