Spicy Tortellini Soup

Ingredients:
  • 1 pound hot or mild Italian Sausage (depending on how much heat you want)
  • 3 cans (14 oz each) beef broth
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (14.5 oz) dice tomatoes with green chilies
  • 1 (16 oz) bag frozen spinach, chopped up
  • 1 can (4 oz) ripe black olives, sliced
  • 1 Tbsp dried basil
  • 1½ tsp dried oregano
  • 1½ tsp Mrs. Dash Southwest Chipotle
  • 1 clove garlic, minced (or 1 tsp refrigerated minced garlic)
  • 2 pkgs (9 oz each) refrigerated spinach cheese tortellini
  • Optional: Parmesan Cheese
Directions:
  1. In large stock pan, cook sausage over medium heat. Drain fat from the sausage.
  2. Add in the rest of the ingredients, except for the tortellini. Bring soup to a boil; reduce heat and simmer an additional 20 minutes. Add tortellini, cover and simmer for 7-10 more minutes.
  3. Serve with sprinkled parmesan cheese if desired.
Notes:
The original recipe came from a co-worker. I loved it, but knew that it needed more heat and more 'stuff'. A little tweak here and a little tweak there, and I think this soup is perfect!
