2 pkgs (9 oz each) refrigerated spinach cheese tortellini
Optional: Parmesan Cheese
Directions:
In large stock pan, cook sausage over medium heat. Drain fat from the sausage.
Add in the rest of the ingredients, except for the tortellini. Bring soup to a boil; reduce heat and simmer an additional 20 minutes. Add tortellini, cover and simmer for 7-10 more minutes.
Serve with sprinkled parmesan cheese if desired.
Notes:
The original recipe came from a co-worker. I loved it, but knew that it needed more heat and more 'stuff'. A little tweak here and a little tweak there, and I think this soup is perfect!
