Spicy Tortellini Soup

I fell in love when I sampled this Tortellini Soup a few weeks back.  We had a ‘eat in’ to say goodbye to a coworker, and this soup was one of the offerings.  I immediately asked for the recipe, and started ramping it up a bit in my head. 

You see, I love spicy food.  Not split your gut/burning mouth spicy….but enough seasonings and heat to go hmmmmmm!!

I know!  I know!  That is a very fine line and you need to be careful.  If you are not one for spice and ‘heat’ then just swap the hot sausage out for the mild, and tone down some of the seasonings.   I cannot believe my luck when this was brought to the luncheon!  Yes, I lost a wonderful co-worker to another district, but I gained a hearty, healthy soup recipe.  =)

You might find this strange, but I do not make soup very often.  Yes, I love soups, but when I am making dinner for the family, the boys just don’t want to hear that soup is on the menu.  And don’t we Mom’s tend to bend to the taste buds of our kids?  {Sigh} 

I remember taking B to the doctor for his yearly physical and my biggest concern was that he wouldn’t eat any fruits and vegetables, other than corn on the cob.  He wasn’t always so picky!  One day he just flat-out refused to eat any of it.  Seriously……he stopped eating applesauce when he found out that it was made from apples!  I still shake my head at the wonder of that statement!  Anyway, the doctor reassured me that he was getting enough nutrients….not to give up…..that taste buds change every 12 years.  He is now almost 19 and we are making small and steady progress!

Tortellini Soup

When I initially had this Spicy Tortellini Soup, it was more broth based with minimal spinach, seasonings and tortellini in it.  In my opinion, it needed more of everything.  More spinach…. more tomatoes….. more tortellini…. double the seasonings, with the same amount of broth.  The ONLY thing I would do differently is to chop up the spinach more.  Bonus:  If you are using frozen spinach, just chop it up frozen and throw it into the broth.  No thawing necessary! 

Tortellini Soup

I made this for the family at the end of January.  It was supposed to be a light dinner with my parents.  Soup, a little salad, and yummy cornbread before heading to the rink to watch Toledo play Miami in a hockey game.  PT and I ate the soup…..my parents did not!  They were stranded up North, unable to make the trek down.  =(  Dang weather!

They missed some great hockey   {Miami won the first game……Toledo one the next game in overtime and 2 shootouts}  and an amazing soup.  My poor mother has had to listen to me talk about this soup, and I have yet to share the recipe with her!  Here you go Mom……just in time for you to get all the ingredients for dinner tonight.  I hope you love it as much as I do!!!

Spicy Tortellini Soup

Ingredients:
  • 1 pound hot or mild Italian Sausage (depending on how much heat you want)
  • 3 cans (14 oz each) beef broth
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (14.5 oz) dice tomatoes with green chilies
  • 1 (16 oz) bag frozen spinach, chopped up
  • 1 can (4 oz) ripe black olives, sliced
  • 1 Tbsp dried basil
  • 1½ tsp dried oregano
  • 1½ tsp Mrs. Dash Southwest Chipotle
  • 1 clove garlic, minced (or 1 tsp refrigerated minced garlic)
  • 2 pkgs (9 oz each) refrigerated spinach cheese tortellini
  • Optional: Parmesan Cheese
Directions:
  1. In large stock pan, cook sausage over medium heat. Drain fat from the sausage.
  2. Add in the rest of the ingredients, except for the tortellini. Bring soup to a boil; reduce heat and simmer an additional 20 minutes. Add tortellini, cover and simmer for 7-10 more minutes.
  3. Serve with sprinkled parmesan cheese if desired.
Notes:
The original recipe came from a co-worker. I loved it, but knew that it needed more heat and more 'stuff'. A little tweak here and a little tweak there, and I think this soup is perfect!

    • Looks like you have already started one….congratulations! My only recommendation is to have fun with it, and write stuff that interests YOU! If you get into the mumbo jumbo of some of the other stuff then you will lose why you started the blog in the first place. Good luck!

  2. I just started making soup and it’s delicious! My favorite is chicken noodle, potato and corn. Soup is so nice on cold days and its been so cold here lately!

    • It has been freezing here in Ohio also, desiring soup on a daily basis. As much as I enjoy soup, I am looking forward to the grilling season!

    • Vegetarian swap would be easy with vegetable broth, increased seasonings OR you could use some of the Morningstar crumbles. I haven’t tried them yet, so no guarantees on how the crumbles taste. Thanks for stopping by!
