Chocolate Chip Cookies with Chocolate Buttercream Filling

You are never going to believe me when I tell you that these Chocolate Chip Cookies with Chocolate Buttercream Filling  only have 2 ingredients!

Yep….2 ingredients! 

Chocolate chip cookie dough and chocolate frosting. 

Uhm, that is more than 2 ingredients!  Not when you get desperate and use store-bought dough and chocolate frosting.  That equals 2 ingredients! =)

When I say I was desperate, I mean I was down to the wire…..totally forgot that I had to bring a dessert to an open house this past Saturday night.  Adding to the problem …… I wasn’t feeling well. 

I opened up our refrigerator and just stared at the contents.  If I must fess up, the cool air felt kind of good on my hot face.  I was not feeling inspired, and I certainly didn’t feel like pulling everything out for homemade treats. 

Let me clarify…..I was not flu sick …. I was stuffed up sinus sick!  I was not contagious….I just didn’t feel like baking.  Shocker, I know!!  I love to bake and find any excuse to dabble in the kitchen.  Tonight is a perfect example.  My kitchen is waiting to be cleaned up after a couple of batches of puppy chow was whipped up…..one being Cookies and Cream, and the other is a new one that is Chocolate Caramel (recipe will be coming soon).  Last weekend, not so much!

Thank the Lord I found a leftover tub of Pillsbury Gluten Free Cookie Dough {Take 5 Chocolate Chip Sundae Cups and Chocolate Chip Cookie Dough Cheesecake} behind some lettuce and radishes.  I quickly went to the cupboard, and instantly got lucky when I found a couple of tubs of frosting.  This is one time I was thankful that I tend to stock up on sale items, and that I tend to use packaged frosting when I am making cake pops.

Winner Winner Chicken Dinner!  Something so simple brightened my day.  Honest to god, I was starting to panic until I found that cookie dough.  If you are one of those people who never use store-bought, don’t be a hater.  I love everything homemade, but sometimes you just need quick and easy.   If you can tweak it enough, you can slap a homemade label on it.  =) I think Sandra Lee would agree with me on this one!

Want to know the best part of this story and super easy recipe?  Walking behind a few people and hearing them say that these Chocolate Chip Cookies with Chocolate Buttercream Filling were A.M.A.Z.I.N.G!  They disappeared in under 15 minutes.  Guess what??  Not one person asked if they were homemade!

Ingredients:

  • Your favorite chocolate chip recipe (store-bought is perfectly acceptable)
  • Chocolate Frosting (I used Pillsbury Creamy Supreme Chocolate Fudge)

Directions:

  1. Bake the cookies according to packaged instructions.  I like mine bite size, so I would suggest using 1 Tbsp of dough per cookie.  Cool completely.
  2. Frost the underside of one cookie with about 2 tsp of chocolate frosting.  Place a second cookie on top, and press lightly to adhere.
  3. Store in a sealed container until ready to serve.

  1. love, Love LOVE your “cheater” recipes!!! I’ve never been much of a baker, but with funds dwindling, this is now a lot of my life. With arthritis in most every joint, it’s difficult to spend a lot of time standing (I know I need a stool), so these fit into my life PERFECTLY, right now. Thank you so much!!!!

  2. Over here will ruin my so call diet lol. I am not a fan of Peanut Butter but my kids kill the entire jar so this would be a great snack for them. Stopping over from the SITS Girls tribe great to meet you.
