Cinnamon Roll Aebleskiver {Danish Pancakes}

I know you are all asking, “What the heck is an Aebleskiver”?

Well let me tell you………traditionally they are Danish pancakes in a distinctive shape of a sphere.  Similar texture to the good ole’ American pancake crossed with a popover, aebleskiver’s are solid like a pancake but light and fluffy like a popover!  Gotta love Wikipedia!  Bottom line…….they are mmmm ….. mmmm …. good!

These little beauties bring me right back to Sunday morning breakfast’s devoured in the Incropera household!  When we weren’t traveling around for swim meets my parents always  made a huge Sunday breakfast.  It was our tradition!  Aebleskiver takes a little bit more time and patience, but are well worth the effort.  I will declare that adding in a little taste of cinnamon roll makes these a favorite in the Tafelski household.

B loves the Cinnamon pancakes at Bob Evans and I Hop, and is always bellyaching to eat at these fine establishments.  Why not give him what he wants in our own kitchen?  These perfect little pancake puffs make their way into our household a few times a year…….usually for dinner when PT will not be making an appearance, and this last time I thought it would be fun to give B & K the taste of cinnamon rolls…….. inside the pancake.  I found the cinnamon filling at Recipe Girl, and added it to my favorite pancake recipe…….you can use any pancake recipe, even mixes would work just fine.  If you are wanting to make these Danish pancakes, the one thing you can’t do without is this specialty pan…..can’t get around it!!   Don’t spend a lot of money on the pan, you can buy it  here, here and even here.

I promise you are going to love every single bite of these little pancakes.  Each one has a burst of ooey-gooey cinnamon.  Certain to make your taste buds sing, and if not……at least your eyelids will be a flutterin’!!!

If you are not a cinnamon roll fan, why not add in the traditional slice of apple?  Or add in a Tbsp of jam? Or even a bit of chocolate…..hmmmm, I think I am on to something….

Cinnamon Roll Aebleskiver {Danish Pancakes}

Printable Recipe
Ingredients:

  • 3 eggs, separated
  • 2 Tbsp sugar
  • ½ tsp salt
  • 2 cups milk
  • 2 cups flour
  • 1 tsp soda
  • 2 tsp baking powder

Cinnamon Filling:

  • 4 Tbsp (1/2 stick) unsalted butter, melted
  • ¼ cup + 2 Tbsp packed light brown sugar
  • ½ Tbsp cinnamon

Directions:

For the Aebleskiver’s:

  1. In small bowl, beat egg yolks until light and lemon colored.  Add in sugar, salt and milk (or buttermilk).  Mix well on low speed.
  2. Sift together flour, baking soda and baking powder.  Add to egg mixture and mix until just blended.  Don’t overmix!
  3. In separate bowl, beat egg whites until stiff.  With a spatula, fold egg whites into pancake batter.  Set aside.

For the Cinnamon Filling:

In a small bowl combine melted butter, light brown sugar and cinnamon.  Stir until fully blended.

  1. Place a small amount of butter in each cup of the Aebleskiver pan.  Heat the pan on medium to medium/low heat.  Once pan is heated and butter is starting to bubble slightly, fill each cup 2/3 full with batter.  In the center of each, add in a dollop of the cinnamon filling-pushing down slightly with a knife of the back of a spoon.  Flip the pancake when edges start to bubble.  You will need to work quickly so that they don’t burn.
  2. Place cooked Aebleskiver pancakes on warmed plate in the oven (on the lowest setting) until ready to serve.
  3. Serve with warmed maple syrup, powdered sugar or even your own cinnamon roll glaze.
