Cheesy Apple Pie {Wicked Weekend}

I can’t think of a better recipe to kick off 2013 than this yummy Cheesy Apple Pie!

I am not a huge pie eater, but after making 3 Apple Pies this past month, I think I may have to change my tune.  This recipe has been waiting patiently in our magazine rack since 2007.  I found this recipe in an old Better Homes and Garden Holiday magazine…… you know the ones…..beautifully photographed food, all glossy at the checkout line at the local grocery or craft store.  I can’t be the only one who is a sucker for them, can I?  I probably have half a dozen of these Holiday magazines, pages turned down signalling me to try them real soon!  LOL!

All I can say is, it was well worth the wait…… and gosh darn it….why did I wait so long!!

PT is a big lover of apple pie!  I happen to be a lover of all things called CAKE!  Seeing as he is not in the kitchen very often…..  who in the heck am I kidding, he is never in the kitchen ……..unless it is to tease me or to snatch some sweat treats …. I tend to lean towards the confectionery desserts.  Battle of the wills, and I usually win. LOL!  Check out some of my favorites here,here and here!

I made this Cheesy Apple Pie for Thanksgiving this year!  My parents are not huge dessert eaters, but I knew that they wouldn’t be able to resist an apple pie.  Plus, brownie points from PT, and those have to count for something….right?

I have already had requests to make this for our upcoming Super Bowl party.  Better yet, PT has a birthday before the big game.  What a treat if I switch things up and actually give him what he craves!  Mind out of the gutter folks…..I was talking PIE, not sex ….although that would make him happy too!!  =)

Cheesy Apple Pie

Cheesy Apple Pie

Serves:  8                                                 Printable Recipe

 For the Pie:

  •  1 cup all-purpose flour
  • ¼ tsp salt
  • 1/3 cup butter flavored shortening
  • ½ cup finely shredded cheddar cheese
  • 3-4 Tbsp cold water
  • 5 cups thinly sliced, peeled tart cooking apples (I like to use Granny Smith)
  • ¾ cup sugar
  • 2 Tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp salt

For the Cheddar Crumb Topping:

  •  ¾ cup sugar
  • ¾ cup all-purpose flour
  • ¼ tsp salt
  • 1/3 cup unsalted butter
  • 1 cup (4 oz) finely shredded cheddar cheese

Directions:

  1.  Preheat oven to 375 degrees.  In a medium bowl, stir together the 1 cup flour and ¼ tsp salt.  Using a pastry blender, cut in the shortening until pieces are crumbly and pea-sized.  Stir in cheese.  Sprinkle dough with cold water, 1 Tbsp at a time, tossing with fork (or hands) until all flour is moistened.  Form dough into a ball.
  2. On a lightly floured surface, use your hands to slightly flatten dough ball into a disk.  Roll disk from center edges into a circle about 12 inches in diameter.  Line a 9 inch pie plate with pastry circle.  Trim to ½ inch beyond edge of pie plate.  Fold under extra pastry and flute or crimp edge.  Do not prick pastry.
  3. Combine apples, sugar, the 2 Tbsp flour, cinnamon and ¼ tsp salt.  Spoon into pastry lined pie plate.  Sprinkle Cheddar Crunch Topping over filling.  Cover pie with foil to prevent over-browning.  Bake pie for 40 minutes.  Remove foil and bake another 20 minutes or until crust is golden brown.  Cool on wire rack.  Serve or cover and chill within 2 hours.

Cheddar Crunch Topping:

In a medium bowl, stir together the sugar, flour and salt.  Using a pastry blender, cut in butter until mixture is crumbly.  Gently stir in shredded cheddar cheese.

  1. What an interesting pairing for a dessert! I’ll bet the subtle saltiness from the cheese adds a lovely depth to the dish. Although I tend to choose cakes over pies too, I’d still reach for a second slice of those one!
