Granola {Honey Nut}

The leaves are starting to sing….dancing and whispering across the lawns, and what am I doing but hiding in the kitchen eating one of my favorite items…..Honey Nut Granola!  Denial of what is to come……raking and raking and more raking, or taking a break and rejoicing in the changing of season with one of my favorite treats?  You decide…..I can go with either one.  At least I am eating something healthy, I could have chosen these.  Patting myself on the back!!

Granola is one of the easiest things you can make and the combinations are endless.  Who can resist sweet coconut, oats and nuts kissed with honey and brown sugar?  This is my all time favorite granola recipe….a true Tafelski staple, a fabulous ‘base’ that can easily be turned inside out by changing up the liquid combinations and seasonings.    Tempting Thyme GranolaI love eating granola raw or on top of greek vanilla yogurt, but I know some of you eat it just like cereal, the granola soaking up every last drop of milk!  What about adding it to ice cream?  Do any of you indulge in this treat?
Tempting Thyme GranolaHolidays are right around the corner, parties and open houses at our doorstep.  Where in the heck does the time go?  I know, I say that all the time……but I have yet to hear a reasonable answer!  Granola will make a wonderful hostess gift!  The array of glass jars on the market is overwhelming.  The hardest part will be deciding which one you can part with….tie a pretty ribbon, or rafia around it….equals the perfect hostess gift.  Going to a house with nut allergies….this would be the perfect gift instead! =)
Tempting Thyme GranolaI cannot wait for you to make this Honey Nut Granola recipe.  There is something so satisfying about making homemade items for your family, and you won’t be able to resist the warmth and sweet aromas tempting you from the kitchen.  Truly a delight!

Granola {Honey Nut}

 Ingredients 

  • 3 cups rolled oats
  • 1 cup unsalted almonds, slivered or chopped
  • 1 cup cashews, chopped
  • ¾ cup sweetened  flaked coconut
  • ¼ cup plus 2 Tbsp  brown sugar
  • ¼ cup plus 2 Tbsp honey
  • ¼ cup vegetable oil
  • ¾ tsp salt
  • ¾ cup raisins
  • ¾ cup craisins

Directions

  1. Preheat oven to 275 degrees F.
  2. In large bowl, combine rolled oats, almonds, cashews, coconut and brown sugar. Set aside.
  3. In smaller bowl, stir together the honey, vegetable oil and salt.  Pour liquid mixture over the rolled oats and stir until everything is coated.  Use your hands if you need to, but for heavens sake……please wash them first!
  4. Spread granola onto a cookie pan sprayed with vegetable spray.  If you don’t have a large pan, you can use 2 smaller ones.
  5. Bake for 45 minutes, stirring every 15 minutes.  Lower the oven to 250 degrees F and bake for another 15-20 minutes.  Watch the granola carefully,you do not want it to burn.  Once it has reached the desired color and texture, remove from the oven and add in raisins and craisins.  Cool completely.
  6. Store in airtight container for up to 1 month.
