Alice Springs Chicken {Outback Steackhouse knock-off}

It has been years since I have been to Outback Steakhouse, but I still remember their Alice Springs Chicken!    I ordered it every time we dined there.    Nothing original about me!    I like something, I stick with it.    Some would say very loyal!  Others would say very boring!  HA!   This and the awesome ‘Bloomin’ Onion’.   Oh to be under 30 again, and able to eat anything without affecting the innards.  I don’t think twice about the onion, but I do  truly miss the Alice Springs Chicken……..mushrooms, bacon and melted cheese broiled on top of a seasoned, moist chicken breast!   Making me drool as I sit here.     Yum!

Chicken and Bacon

This is a quick and easy chicken dish that your kids will love.  Don’t want to saute the chicken and heat up the kitchen {hey, we are in the Fall season….heat it up}?  That’s okay, this can easily be converted to the grill.  My Just a Matter of Thyme Grilled Chicken would be perfect for this conversion.   Just make sure the bacon is cooked first.  Speaking of bacon, you will notice that I baked mine in the oven.  I like to do this for two reasons.   I don’t have to deal with grease spatters, and my kitchen doesn’t smell like a grease pit.  Clean-up is a snap as well.   For the honey mustard dip, I just used a store bought honey mustard.  Nothing fancy about it, but very quick and doesn’t add any additional dishes to wash.  If you have a great homemade honey mustard recipe, send it my way.  I am always up for a new recipe!

Alice Springs Chicken {Outback Steakhouse knock-off}

(Servings:  4)

Ingredients:

  • 4 Chicken Breasts, pounded to an even thickness
  • 1 bottle Lawry’s Original Seasoned Marinade
  • 8 slices bacon
  • 1 cup fresh mushrooms
  • 8 slices of Colby-Jack cheese
  • Honey Mustard Sauce

Directions

  1. Marinate the chicken breasts for 1 ½ hours (30 minutes if pressed for time).
  1. While the chicken is marinating, bake the bacon on cookie sheet @ 450 degrees F for 15 minutes, or until crispy.  Remove bacon and let drain on paper towel covered plate.  Using 1-2 Tbsp of the bacon fat, saute fresh mushrooms until soft and tender.  Set aside.
  1. Spray saucepan with vegetable oil (or use an additional 1-2 Tbsp of bacon fat), and saute chicken breasts on medium heat 5-7 minutes on each side.  If in doubt, test with a meat thermometer,needs to have an internal reading of 160-170 degrees.  While chicken is cooking, preheat the broiler~low setting.
  1. Remove the saucepan from the heat and layer each chicken breast with mushrooms, 2 slices of bacon and 2 slices of colby jack.  Put saucepan under broiler until cheese is melted.
  1. Serve Alice Springs Chicken with your favorite Honey Mustard.

  3. Wow…does this look deliscious and guess what is for dinner tonight? Chicken! I think I’m going to try this minus the mushrooms. While I love mushrooms, the other picky eaters in the house do not. Thanks for the recipe.
