Parmesan Crusted Baked Salmon!

 

I think this is the first Easter that my Mom and Dad have not spent it with us.  That may be an exageration, but it has been at least since Nigel killed the Easter Bunny in ’07.

The boys and I were visiting my sister in Escondido over Spring Break, all Easter trappings safely hiding  in my suitcase.  PT was beside himself, feeling so sad not to be traveling with us, as his break was not the same as the kids.  YA…right!  Let’s face it….he was over the moon to have the house to himself for an entire week.  Dirty dishes piling up, pizza and chips every night and probably a poker party….or two!  The day before Easter, I opened the back door and Nigel raced in with a dead bunny in his mouth.  The boys were behind me, and I…the smart aleck that I can be….said OMG, Nigel killed the Easter Bunny.  The stunned look on the boys’ faces made me for a smidgen…..just a smidgen…wish I could take it back.

Since that fateful day, we have not had an egg hunt.   Nor have I had to go overboard on candy and gift laden baskets (seriously people, I think B and K were beginning to think that the Easter Bunny was just another Santa Clause….GEEZ).  What ever happened to the candy filled eggs and baskets that fateful trip??    My stomach, of course

For all of you thinking that I am absolutely the worst mother on the planet…the boys still receive a little something something for Easter.  It is the form of a card…signed by the famous Nigel…with a $10 I-tunes gift card, and a peanut butter bunny for B, and a solid chocolate one for K.  Even though Nigel has gone to doggy heaven, this small gester keeps him alive in their eyes……PLUS, gosh dangit….it is just a FUNNY STORY!  Then again, maybe you had to be there to appreciate it! 

Anyway…I was missing my Mom on Easter, so I thought I would honor her by making salmon.  Yes, we still had brown sugar crusted ham, but thought this would be a nice alternative.  Especially since PT is not a ham kind of guy.

Parmesan Crusted Baked Salmon

Ingredients:

4 Salmon fillets or steaks-approximately 1” thick
½ cup parmesan
3 Tbsp mayonnaise- I use Hellman’s Light
2 Tbsp softened butter
4 Chives, chopped
Season with black pepper and paprika to taste.

 Directions:

 – Spray 13×9 baking dish with vegetable spray; put salmon in dish meatiest side facing up.

– Mix together parmesan, mayonnaise, butter, and season with black pepper and paprika.

 – Spread parmesan mixture on top of salmon and sprinkle with chopped chives.  Bake ,uncovered, at 400 degrees for 30 minutes or until salmon flakes when cut with a fork.
