Cookies and Cream Oreo Fudge Brownies!

I can’t tell you how thankful I am that it is Thursday, it has been one hellish week!

Hmmmm…maybe I should start a new series called Thankful Thursday’s?  

Original? 

No…I am pretty sure someone else  has already put it into play.   But maybe it would put my life into perspective a little.  I have so many blessings in my life, but sometimes they get overshadowed by a bad day at work, kids in too many different directions, hamster cage needing cleaning, homework needing supervision, laundry staring at me from the kitchen table…begging to be folded and put away, never enough sleep, b and k not picking up after themselves, bills needing to be paid, realizing you don’t have any milk in the house at 11pm and your kids are obsessed with cereal for breakfast.  The list can go on and on…….and I need to stop whining!

I am thankful it is Thursday, after 7 days of being sick I am finally starting to feel human.  To make matters worse, PT was sick right along with me.  In fact, the obnoxious man is still coughing away!  I don’t think we have ever been sick at the same time before, and I hope to never have a repeat. 

What helped me get through these days filled with laryngitis, pink eye, miserable cold and a sinus infection to boot? 

Thinking of friends, simple as that!  What makes a get together with friends even better?  Glorious, scrumptious, fudgy brownies!  Kids love them, and grownups keep sneaking a forkful….dreaming they had the metabolism of a kid and could eat even more!  LOL!

These remind me of a recent Sunday, spending 9 1/2 hours with 2 wonderful woman, cutting up 16  hockey jerseys in order to make pillows out of them.  I promise a picture later, we are surprising the team with them tomorrow night…SHHH!  I couldn’t believe how fast the time flew, every time a glimpse at the clock reflected another 2-3 hours had passed.  I wouldn’t trade that day for anything!

If you need a quick something, something to bring to a party or get together, you cannot…I repeat cannot go wrong with these little beauties.

They are the perfect combination of chewy and crispy! 

I promise next time I won’t talk so much.  I start rambling and I know all you want is the recipe! =)

 

Cookies & Cream Oreo Fudge Brownies

 Ingredients:
1 box Brownie Mix, 13×9 family size
1 heaping ½ cup of Cookies & Cream ice cream, let melt at room temperature
¼ cup hot fudge topping (room temperature)
10-12 Oreos

 Directions:

-Preheat oven according to the directions on the box-usually 350 degrees.

-Spray an 8×8 baking dish with vegetable spray.

-Combine brownie mix with the eggs and oil as directed on the box, but instead of the water add in the ice cream and hot fudge to the brownie batter and stir until combined.

-Pour half of the brownie batter into the prepared pan, layer with Oreos, then top with remaining batter.

-Bake for 40-50 minutes or until toothpick comes out still a little moist. 

Note:

I made the mistake of using a 9×9 pan the last time I made these, and to add insult to injury left them in too long.  The brownies were chewy, but the top was a little crispier than normal, as the batter sunk in between the oreos.  These are better if a smidgen undercooked (still moist when toothpick comes out), as they will replicate a lava cake with oreos.
