You have just arrived home from work.  You drag your weary body into the house and the first words you hear are not “Hey Mom, it is great to see you, how was your day” or “Wow, you look tired honey let me take a load off your shoulders, a. I have already started dinner, or even b. Let’s go out tonight”.

No, what most of us get…sometimes even as we place our first foot on the driveway, dreading the thought of dodging basketballs, or in my case, hockey pucks….”Mom, I am starving, what’s for dinner?”

One of my mission’s is to come up with a base of fast, easy recipes that can be put together without much thought or planning.

I believe I have found my first recipe that can be labeled Quick and Easy!  I found this recipe off of the plainchicken website and thought I would give it a go.

My oldest is a very picky eater, going as far as giving up applesauce when learning that it was made from apples.  TRUE story, I swear!!  When he can walk into the kitchen, make the statement, “ohhh I guess this will do”….I think thoughts of pizza were swirling in his head…cautiously took one, AND then went back for 3 more = great success.  This recipe will be the first to make the cut.

What would make it even better, you say?  The boys’ actually making it on their own so that when I step into the kitchen I see table set and dinner smiling up at me!!  Now that would be something!

Tempting Thyme Roast Beef Crescent Rolls

French Dip Cresents

Serves: 4

Ingredients:

½ pound deli roast beef, thinly slice
4 slices provolone cheese
4 tsp horseradish sauce or Ranch dressing (I used creamy horseradish sauce)
1 can refrigerated crescent roll
1 packet Au Jus Gravy mix

Directions:

Preheat oven to 375 degrees.

Separate crescent rolls into 8 triangles.  Spread ½ tsp horseradish sauce on each crescent.  Top each crescent with ½ slice provolone and roast beef.  Roll up crescents and place on parchment covered baking sheet.  Bake for 15 minutes, or until golden brown.

While crescents are baking, make Au Jus according to directions on packet.  Serve Au Jus with warm crescents.
